"Albumin" reads like something from a lab report rather than a breakfast item, and that clinical tone is exactly why it clears a quick label scan. On a food label it most often means egg white protein — the same thing you'd be avoiding if the panel simply said egg. A parent running an eye down the ingredient list for the word "egg" can pass right over it without registering anything worth a second look.

The name also shifts spelling, which multiplies the chances of missing it. Albumen, egg white protein, and ovalbumin all point to the same ingredient, and a single shopping trip can turn up more than one version depending on the manufacturer. Albumen in particular is easy to mistake for a typo or an unrelated word, since only one letter separates it from albumin. Learning to treat all of these as the same entry is more reliable than memorizing which brand uses which spelling.

Albumin sits in the Ovomucoids family, associated with egg allergy, where the dominant egg white allergen ovomucoid (Gal d 1) is heat-stable — meaning cooking is not something to assume away. Reactions in this family can include anaphylaxis. Two closely related label names, lysozyme and ovomucoid, belong to the same territory and are worth recognizing alongside it.
