Case notes

Gluten is a wheat-derived ingredient, but the way it appears on packaging doesn't always make that connection obvious. "Vital wheat gluten" and "wheat gluten" both keep the word wheat in view, which helps — yet a fast scan for the single word "wheat" can slide right past a two- or three-word phrase buried mid-list. And when the label simply says "gluten," the wheat origin is implied rather than spelled out.

The bigger blind spot is seitan. It reads like a standalone food, the way tofu or tempeh does, and it turns up most often in vegetarian and plant-based products where parents may be scanning for other things entirely. Seitan is nearly pure wheat gluten, so it belongs on the same mental list as the more familiar wheat words — not in a separate category.

Gluten sits in the Prolamins family, alongside proteins such as gliadin, secalin, hordein, and avenin, and this group is associated with wheat and gluten allergy as well as celiac disease. Reactions in this family can be serious, including anaphylaxis, which is why the naming matters as much as it does. Several neighbouring label terms are worth learning at the same time: malt, hydrolyzed wheat protein, modified food starch, spelt, durum, and bulgur. Keeping all of those names together in one place — a phone note, or a tracked list in an app — turns a slow ingredient-by-ingredient read into something you can do in a grocery aisle with a child in the cart.
